Salisbury Woman Wins Fair Pie Baking Contest

Eva Seibert of Salisbury Township won a blue ribbon for her Fresh Strawberry Pie in the Great Allentown Fair's Pie Baking Championship

Eva Seibert of Salisbury Township won a blue ribbon for her Fresh Strawberry Pie in the Great Allentown Fair's Pie Baking Championship.

Seibert, winning her first blue ribbon in the pie contest, was awarded $200, plus an engraved pie server.

Fresh Strawberry Pie

1 Pillsbury Refrigerated Pie Crust

2 ounces semi-sweet chocolate

2 1/4 cups heavy cream, divided

3/4 cup granulated sugar

3 tablespoons cornstarch

1 cup water

1.5 ounce (half a package) strawberry gelatin powder

6 cups strawberries (rinsed, hulled and dried)

3 tablespoons instant vanilla pudding powder 

Preheat oven to 450 degrees F. Unroll Pillsbury refrigerated pie crust and place in a 9-inch pie plate. Line pie pan with foil and add pieweights. Bake for 10 minutes. Remove foil and pie weights and bake until bottom is lightly brown, about 8 more minutes. Cool. 

In a glass measuring cup, microwave chocolate and 1/4 cup heavy cream for 1 minute. Let stand for 1 minute and stir until chocolate is melted. Refrigerate.

In a medium saucepan, combine sugar and cornstarch. Add water and cook over medium heat until mixture thickens. Cook for 1 minute, stirring constantly. Remove from heat and stir in strawberry gelatin. Cool slightly and combine with strawberries.

Spread chocolate into baked pie crust. Pour strawberry mixture into crust, pressing berries into place if necessary.

Whip remaining 2 cups of heavy cream with pudding powder until stiff. Pipe around pie.

Yields: 1 pie
